This recipe has been in my family for 4 generations, thanks to my great-grandmother! The cookies it produces are often referred to by non-family members as "the best snickerdoodle cookies I've ever had"! We love these einkorn snickerdoodles and we hope you will too!
Frozen Einkorn Snickerdoodle Cookie Dough Directions:
Preheat oven to 400°F and mix 1/4 cup of sugar with 1 tbsp cinnamon powder in a small bowl. Spoon and shape heaping teaspoons of the well-chilled dough into the cinnamon and sugar mix. Roll dough around until well coated.
Place dough about 2" apart onto ungreased cookie sheet. If dough becomes too soft during use, re-chill in freezer until it becomes firm but not frozen.
Bake cookies 12-15 minutes or until edges are golden brown. Cool slightly (about 5 minutes).
They will puff up when baking and then "fall" and crinkle with cooling. Loosen with spatula and enjoy!
