Blackberry Jelly

  • 4 cups blackberry juice
  • 7 1/2 cups sugar
  • 2 tbsp lemon juice


Blackberry Juice

  1. Wash, crush, and simmer berries until soft. Use just enough water in pot to prevent sticking.

  2.  Strain through cheesecloth and add back to pan.

Blackberry Jelly

  1. Combine all ingredients in a large saucepot. Bring to a boil over high heat and stir to prevent sticking.

  2. Bring to gelling point. Skim foam if needed. 

  3. Ladle into hot jars leaving ΒΌ inch headspace. Remove bubbles. 

  4. Add two-piece lids and clean the rim with a warm wet towel. Process pints and quarts for 10 minutes according to general water bath canning directions.

Recipe Notes

DO NOT double or triple recipe. This will cause the jelly to not set up. Process 1 full recipe at a time.
