Coconut Flour Chocolate Chip Cookies

  • 1/2 cup butter, room temperature
  • 6 tbsp honey
  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 3 eggs
  • 1 tsp vanilla extract (we use homemade)
  • 1/2 cup chocolate chips, we use mini


  1. Cream butter, vanilla extract, and honey until smooth. You may need to scrap the sides of the bowl down to achieve a really smooth texture.

  2. Add coconut flour and baking soda. Mix until well combined - again, you may need to scrap the sides

  3. Add eggs and beat until well combined.
  4. I like to mix for about 2-3 minutes at this point (on medium speed) so that the coconut flour is very smooth and there are no lumps at all in the batter.

  5. Add the chocolate chips. I use mini chocolate chips, but regular chocolate chips will work if that's what you have on hand!

  6. Spoon batter onto a parchment lined baking sheet and bake at 375° for 10 minutes.
  7. Allow to cool for a few minutes before removing from tray or they will fall apart.

Recipe Notes

I do not recommend freezer this dough as the honey gives it an odd taste after being frozen.
