Homemade Chicken Salad Recipe
Learn how to make the best homemade chicken salad recipe without celery or grapes. This easy and healthy recipe is great on sandwiches or lettuce for a low carb option.

cooked chicken, shredded (we use grilled chicken breasts seasoned with salt, pepper, and garlic)
mayonnaise (we use homemade)
red apple, washed and diced into small pieces
diced sweet gherkin pickles (we use homemade)
chopped green onions
(add more spices to taste as needed)
Shred chicken while warm, or use a food processor to pulse briefly to chop.
Combine all ingredients in a large mixing bowl and mix until well combined.
Add additional mayo or spices as needed, for your personal tastes.
Serve on fresh bread or a bed of lettuce.
NOTE: This chicken salad is BEST cold the next day, but is wonderful to serve right away as well.
