Ingredients

cups
cooked chicken, shredded (we use grilled chicken breasts seasoned with salt, pepper, and garlic)

cups
mayonnaise (we use homemade)

red apple, washed and diced into small pieces
1/2
cup
diced sweet gherkin pickles (we use homemade)
1/4
cup
chopped green onions
1/2
tsp
salt

tsp
garlic powder

tsp
pepper
(add more spices to taste as needed)
Instructions
Shred chicken while warm, or use a food processor to pulse briefly to chop.
Combine all ingredients in a large mixing bowl and mix until well combined.
Add additional mayo or spices as needed, for your personal tastes.
Serve on fresh bread or a bed of lettuce.
Notes
NOTE: This chicken salad is BEST cold the next day, but is wonderful to serve right away as well.
