This homemade pancake mix is an easy way to enjoy fluffy, from-scratch pancakes without the extra effort. Sift together the flour and baking soda in a large bowl, then whisk well to combine. You can double or triple this batch if you'd like, just be sure to whisk well to incorporate the baking soda completely.
Transfer the pancake mix to a glass jar or airtight container for storage. If gifting, add a ribbon and our free printable label for a personalized touch.
To make pancakes, combine 1 cup of the dry mix with 1 egg and ¾ to 1 cup of milk, whisking until smooth. 1 tablespoon of melted butter can be added per cup of mix as well, but it is optional.
Heat a buttered skillet or non-stick griddle over medium heat. Pour batter onto the hot surface, cooking until bubbles form on top. Flip and cook the other side until golden brown.
Enjoy warm with butter, maple syrup, or your favorite pancake toppings!
