Ingredients

- Flour – We use einkorn flour, but any wheat flour will work. Even a 1:1 gluten-free flour will work! If you are using whole wheat or fresh milled flour, use the cup measurement, instead of the weight measurement.
- Baking Soda – Acts as a leavening agent, helping the pancakes rise and stay light.
- Sugar – If you like sweet pancakes, you can add sugar to the mix as well. We omit this completely, but it’s up to you! Only dry sugar should be used, no liquid sweeteners.
