I love an easy breakfast, that’s why I try to make as many things in advance as I can! My freezer is filled with mini quiches, blueberry muffins, and ready-to-bake cinnamon rolls! So having this homemade pancake mix on the shelf has been another great addition to the “easy breakfast” line-up!

Homemade Pancake Mix with Gift Tag

Being able to make quick and fluffy pancakes anytime without getting a bunch of dishes dirty is a game-changer! Plus, this mix is free from preservatives, budget-friendly, and incredibly easy to make. Whether you’re making a batch for yourself or putting together a charming DIY gift, this mix is a must-have in any kitchen!

Ingredients

This is seriously such an easy recipe! You can customize the sweetness and flour type if you want, so let’s take a look at the ingredients. The full printable recipe can be found at the end of the post!

  • Flour – We use einkorn flour, but any wheat flour will work. Even a 1:1 gluten-free flour will work! If you are using whole wheat or fresh milled flour, use the cup measurement, instead of the weight measurement.
  • Baking Soda – Acts as a leavening agent, helping the pancakes rise and stay light.
  • Sugar – If you like sweet pancakes, you can add sugar to the mix as well. We omit this completely, but it’s up to you! Only dry sugar should be used, no liquid sweeteners.

Instructions

Here are the full instructions for preparing and storing, as well as making the full batter from, this homemade pancake mix. Note, that if you are gifting or storing this mix, you will stop at step 2. It’s so easy! Once you want to use the mix to make pancakes, you will go on to step 3.

  1. Prepare the Mix – Sift together the flour and baking soda in a large bowl, then whisk well to combine. You can double or triple this batch if you’d like, just be sure to whisk well to incorporate the baking soda completely.
  2. Store – Transfer the pancake mix to a glass jar or airtight container for storage. If gifting, add a ribbon and our free printable label for a personalized touch.
  3. Mix the Batter – To make pancakes, combine 1 cup of the dry mix with 1 egg and ¾ to 1 cup of milk, whisking until smooth. 1 tablespoon of melted butter can be added per cup of mix as well, but it is optional.
  4. Cook – Heat a buttered skillet or non-stick griddle over medium heat. Pour batter onto the hot surface, cooking until bubbles form on top. Flip and cook the other side until golden brown.
  5. Serve – Enjoy warm with butter, maple syrup, or your favorite pancake toppings!

Making the Most of This Pancake Mix

While this pancake mix is very straightforward, there are a few things you can do to make it even better for you and your family!

  • Storage Life – Stored in an airtight container, this mix will stay fresh for up to 6 months in a cool, dry place.
  • Adjusting the Sweetness – You can mix in a tablespoon or two of sugar for a slightly sweeter pancake or add powdered vanilla for extra flavor.
  • Customize the Dairy – Any milk will work, including dairy, almond, oat, or coconut milk. Adjust the amount to reach your desired batter consistency. The same goes for butter, you can omit it completely, or use a butter of your choice!
