Einkorn Banana Bread Muffins

Simple and delicious, this easy banana bread muffins recipe can be made with einkorn flour or any wheat! No sugar added, just sweetened with bananas and honey or maple syrup so you can feel good about serving them to your family for breakfast!

Imagine how heavenly your house is going to smell after you bake these moist and easy banana bread muffins.  The great news is you don't just have to smell them!  You can eat them, too!

Einkorn Banana Bread Muffins

The best part about this banana bread, besides being muffins, is no sugar is used.  So there is no need to feel guilty about eating this delicious treat.  The banana bread muffins are sweetened simply with honey or maple syrup.

My family absolutely loves banana bread.  Since I have small children, grab and go muffins are always a plus.

What's even better is these banana bread muffins can easily be made ahead of time and put into the freezer.   When I wake up in the morning, I can set them out to thaw on the counter or heat them back up in the oven.

It makes for a very low maintenance morning.  My favorite kind of morning!

STEP ONE

Peel ripened bananas and place them in a bowl.  Blend the bananas only until well mashed.  You could do this with a mixer, but a fork or potato masher works great, too.

If you don't have ripened bananas, unripened bananas will work.  Ripened bananas are definitely sweeter though!

Sometimes, I take my unripened bananas and throw them on a baking sheet for fifteen minutes in the oven at 275°F.  It helps sweeten up the bananas.

No worries though!  The honey or maple syrup will sweeten the banana bread muffins either way.  :-)  This is just a tip for an extra sweet tooth.

STEP TWO

Add the flour in first, then the other ingredients.  Mix until all the ingredients are well combined.

STEP THREE

Add liners to your muffin tin or grease the muffin tin if you choose not to use liners.  Then fill the cavities 3/4 of the way full with banana bread batter.

STEP FOUR

Bake the muffins at 350°F for 25-30 minutes.

Ingredients

  • 3 bananas ripe is better, but not crucial
  • 1 1/2 cups einkorn flour (or any wheat)
  • 1/3 cup melted butter
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 pinch salt

Instructions

  • Peel the bananas and mash them in a bowl with a fork or potato masher. Blend bananas only until well mashed.
  • Add the flour first and mix together well. Mix in remaining ingredients until well combined.
  • Add liners or grease muffin tin. Fill each cavity 3/4 of the way full.
  • Bake muffins at 350° F for 25-30 minutes, or until a clean toothpick is achieved.

Notes

You can freeze these muffins for up to 6 months and thaw to room temperature or heat from frozen in the oven.

    These were delicious and very easy! The recipe I usually use has A LOT of ingredients. I wanted something simple with very few ingredients. This recipe was exactly that! The muffins were moist and delicious. The whole family loved them! This is now my new go-to recipe.
