These 10 bread recipes you can make without a mixer prove you don’t need fancy equipment to fill your kitchen with the smell of fresh-baked goodness. From crusty artisan loaves and soft sandwich bread to sweet favorites like banana, blueberry, and pumpkin bread, each recipe is simple, unintimidating, and perfect for cozy baking days!

Yeast Bread Recipes

Homemade yeast bread fresh from the oven is simply one of the best experiences out there. From classic sandwich loaves to rustic artisan breads, these recipes are perfect for slowing down a little to make some delicious homemade moments!

Like all the wheat recipes on my site, these breads use einkorn flour! However, you can also make them with modern wheat, if desired. Just note that you may need to add a little more liquid if the dough is too firm, as einkorn requires less liquid than modern wheat!

1. No-Knead Sandwich Bread

This is the perfect no-mixer bread recipe to start with! Although I do show you how to use a mixer in the post, it’s not required! You can mix this bread by hand in a bowl, then knead it on the counter for about 5 minutes before letting it rise in a greased bowl. It’s a soft and sturdy loaf of bread that is perfect for anything you want to use it for!

2. Classic Peasant Bread

This requires neither a mixer nor a bread pan! Not everyone owns, or needs, a loaf pan, but that doesn’t mean fresh bread is off the table. This delicious, simple einkorn recipe can be made in a pie pan, with no special implements and extra clutter required! You can even make it in a glass mixing bowl, if you have one that is oven safe!

3. Artisan Sourdough

Sourdough is super popular, and for good reason… It’s like the royalty of breads. For anyone who is a little daunted by the task, this recipe removes several steps, simplifying the process without sacrificing that amazing sourdough flavor! If you don’t have a starter yet, learn how to make your own sourdough starter in minutes!

4. Easy Homemade Focaccia

Focaccia is the perfect bread when you want something a little different, with its crisp crust and light, airy inside. It uses olive oil, which is so good for you, so you can feel even better about eating this bread!

There’s a reason why the baguette is the iconic bread of France, where they know food! Learn to make perfect baguettes right at home, and start living like there’s a French bakery around the corner. Make a batch of French onion soup to really complete the experience!

Quick Breads

Quick breads are simple, comforting recipes that come together without yeast or rise times. Each of these cozy loaves is a simple treat, perfect for afternoon snacks or warm slices shared around the table! I like to double each recipe and freeze half for later! It’s never twice the work, but it lets you fill your freezer with ready-to-eat bread!

6. Irish Soda Bread

While this might seem like an odd addition in the quick breads section, since it doesn’t require yeast, it’s in the right place! The scone-like texture of this Irish staple is a pleasant alternative to standard breads, and, with no rise times, it cuts out a significant portion of the prep time! We like to slather ours with butter and enjoy it with a bowl of hearty vegetable soup!

7. Banana Bread

It’s really a mystery why bananas seem to go from green to brown the moment you turn your back on them! This awesome banana bread recipe freezes perfectly, so it’s an ideal use for any amount of brown bananas sitting around the house.

8. Double Chocolate Zucchini Bread

Zucchini is one of those odd ingredients that seem out of place in bread, but is actually the perfect addition, especially in the summer! This moist, tasty loaf is so loaded with chocolate that anyone who tastes it won’t believe there’s zucchini in there, too!
