2 small bowls filled with homemade vanilla pudding

When you first start a diet like GAPS or paleo, one of the first things you miss is dessert! However, with this easy vanilla pudding recipe, you can enjoy dessert without the guilt!

In fact, this entire homemade vanilla pudding recipe only calls for 1 tablespoon of honey. And it's so delicious that your whole family will be begging for more!

We generally pair this vanilla pudding recipe with a coconut flour vanilla cupcake recipe and some strawberries for an amazing paleo strawberry shortcake. Yum!

Homemade Vanilla Pudding: Paleo, GAPS

This recipe comes together very quickly, making it an amazing last minute dessert idea! You likely have everything you need to make it right now, let's get started!

Step One

In a small sauce pan, add 1/2 cup of water and sprinkle gently (to avoid clumping) 1 tablespoon of gelatin over the water. We use the Great Lakes brand grass-fed gelatin.

Allow the gelatin to bloom for 5 minutes in the cold water.

Step Two

Place the gelatin water over low heat and whisk thoroughly just until the gelatin is dissolved. Remove from heat.

Step Three

In a medium sized mixing bowl, combine remaining ingredients and whisk to combine. Add the gelatin mix to the mixing bowl and whisk to combine well.

Step Four

Cover the mixing bowl with plastic wrap and place in the fridge for 15 minutes. Whisk well at 15 to check texture.

If the texture is not thick enough yet, place the bowl back in the fridge and check it every 15 minutes, whisking each time.

**Whisk pudding for about 1-2 minutes before serving to loosen the mixture.
