Chocolate Cut Out Cookie Recipe with Strawberry Icing

What I love about a good cut-out cookie is little hands can easily help!  And kids love to press down with their shape-cutters on play-dough, so why not enlist in their help for these cookies, too?

Chocolate Cut Out Cookie Recipe

My son and I often make cookies together. Most of the time they are “plain Jane” chocolate chip cookies (YUM!), but sometimes we get more adventurous and make something special, like these animal cracker cookies.

One day as we were considering making a batch of cookies, I asked him what he might want.

Without hesitation, he said “chocolate cookies with strawberry icing”!

Mind you, we’d never made chocolate cookies OR strawberry icing, but he just knew what he wanted!

So, I set about creating a chocolate cut out cookie recipe with strawberry icing.

I used a basic icing recipe with a heaping dose of our homemade strawberry jam for the strawberry icing. However, if you wanted to avoid the powdered sugar, you could also use this honey sweetened buttercream frosting recipe with some strawberry jam instead!

STEP ONE

Combine powdered sugar, vanilla, milk, and butter with an electric mixer. Mix until smooth and fluffy.

STEP TWO

Add dye, if desired and mix until the color is even throughout. We use this all natural food dye and really like it!

STEP THREE

Add strawberry jam and mix for 1-2 minutes until well combined. Leave icing at room temperature until the cookies are cool enough to add icing.

STEP FOUR

Cream the butter and sugar together until light and fluffy. Add the egg and vanilla and beat until well combined.

STEP FIVE

Add the remaining ingredients and mix until well combined and there is no white flour visible. You may need to scrape down the sides during this step.

STEP SIX

Form dough into a disc and chill for at least 2 hours or until well firm.

STEP SEVEN

Roll on a well floured surface to 1/4″ thickness and cut into desired shapes. Place on a parchment lined baking sheet and bake for 10-12 minutes, or until browned around the edges.

STEP EIGHT

If desired, cool on a baking rack completely before icing.

Ingredients

Dough Ingredients

  • 1 1/4 cups all-purpose flour (150g) (we use einkorn)
  • 6 tbsp butter, room temperature
  • 3/4 cup powdered sugar
  • 1 pinch salt
  • 1 tsp brewed coffee
  • 1 tsp vanilla
  • 1/3 cup cacao
  • 1 egg

Icing

  • 2/3 cup powdered sugar
  • 3 tbsp butter, room temperature
  • 2 tsp milk
  • 1 tsp vanilla
  • 2 tbsp strawberry jam
  • 2 drops all natural red food dye, optional

Instructions

For Icing:

  • With an electric mixer, combine powdered sugar, butter, milk, and vanilla until smooth.
  • Add food dye, if desired and mix until color is even.
  • Add strawberry jam and mix for about 2 minutes to incorporate well. Keep icing at room temperature until cookies are ready to ice.

For Cookies:

  • Cream the butter and sugar together until light and fluffy. Add the egg and vanilla and beat until well combined.
  • Add the remaining ingredients and mix until well combined and there is no white flour visible. You may need to scrape down the sides during this step.
  • Form dough into a disc and chill for at least 2 hours or until well firm.
  • Roll on a well floured surface to 1/4" thickness and cut into desired shapes. Place on a parchment lined baking sheet and bake for 10-12 minutes, or until browned around the edges.
  • If desired, cool on a baking rack completely before icing.
