Paleo Coconut Flour Vanilla Cupcakes
When we were doing the gut healing diet GAPS, we did a lot of experimenting with coconut and almond flours for baked goods. This recipe was one of our favorites for an occasional sweet treat!
I paired it with my delicious honey sweetened buttercream icing for a delicious treat even my non-GAPS family members love!

Paleo Coconut Flour Vanilla Cupcakes
Ingredients
- 1/2 cup coconut flour
- 4 eggs
- 1/2 cup raw honey
- 1/3 cup coconut oil or butter melted
- 2 Tablespoon milk any type
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon apple cider vinegar
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract optional
Instructions
- In a large bowl, combine all ingredients EXCEPT coconut flour and stir well until thoroughly mixed.
- Shake coconut flour into the flour, stirring the entire time. This will help avoid lumps in the batter! Let batter rest for 5 minutes.
- Fill 12 cupcake liners 3/4 of the way with batter and bake at 350 degrees for 15 to 20 minutes or until golden brown.
- Allow to cook fully before adding frosting of your choice or enjoy plain!
