Another fun way to use all those large zucchini is by turning them into a delicious zapple pie! Which is of course an "apple" pie made using only zucchini and no actual apples!
That's right! Grab your favorite pie crust recipe and whip up a batch of zapple pie for after dinner tonight! Again, just like with the zucchini flour chocolate cake, you cannot tell this isn't a regular apple pie!

We make the mix during the summer and freeze it in gallon bags to thaw and make throughout the year. Perfect for traveling and lunchboxes!

Excellent ideas that will be added to my large zucchini list. One of my favorite dish to use with large zucchini is to make zucchini bread. I’ve done this for many many years. Although when you’re shredding the zucchini you want to take out as many of the large seeds before mixing or freezing. By freezing the shredded zucchini in 2 cup freezer bags, you can pull out a bag to make any time during the year.

I would add Blueberry Zucchini Bread to the list of uses for large Zucchini. Here’s a PIN of the recipe. You won’t believe how good it tastes. Hint, to get rid of some of the excess moisture in your shredded zucchini, pile it in a clean dish towel and wring it out.

It looks like a medium size watermelon.
Have any thoughts about what to do with it
It grew where I put old plants, in the beginning of a marsh in my backyard , was last fall. I was surprised that several zucchini plants started to grow there

Hi Bob, for those huge ones we generally harvest the seeds and turn the rest into flour!
