We’ve all seen them, the baseball bat sized zucchini that seem destined for the trash pile. WAIT! Don’t throw those giant zucchini away!

There are several unbelievably amazing recipes that cannot be made with small tender zucchini, but call for the large zucchini instead!

Because the Back to Eden gardening method produces such crazy growth, we usually end up with several giant zucchini every day.

Just look at this harvest from only two days of growth!

Since I am committed to saving the most money we can every month, I knew I had to figure out exactly how to use these crazy huge zucchini!

Here are the 5 recipes for using large zucchini that we use every single month during zucchini season!

Squash Flour

This recipe shows you exactly how to turn your zucchini (or yellow squash) into flour for gluten free baking! We make at least one squash flour chocolate cake every week!

Not a single person we have served it to has known there was anything to it but delicious, rich, chocolate cake!

Zucchini Apple Pie “Zapple” Pie

Another fun way to use all those large zucchini is by turning them into a delicious zapple pie! Which is of course an “apple” pie made using only zucchini and no actual apples!

That’s right! Grab your favorite pie crust recipe and whip up a batch of zapple pie for after dinner tonight! Again, just like with the zucchini flour chocolate cake, you cannot tell this isn’t a regular apple pie!

Strawberry Zucchini Fruit Leather

Fruit leather is delicious, but it can be expensive to buy high quality fruit and make it yourself. But with this amazing zucchini fruit leather, you get all the flavor and texture of strawberry fruit leather without having to go broke buying a bunch of strawberries!

We make the mix during the summer and freeze it in gallon bags to thaw and make throughout the year. Perfect for traveling and lunchboxes!

Mock Zucchini Pineapple Chunks

Along the same lines as the strawberry zucchini fruit leather, you can turn your giant zucchini into mock pineapple chunks for healthy snacking!

Roasted Zucchini Seeds

Just like pumpkins, large zucchini seeds can be roasted and seasoned for snacking!

This is perfect for using giant zucchini because only the seeds from the large zucchini can be used for this! When the zucchini is small the seeds are too soft for roasting.

    Excellent ideas that will be added to my large zucchini list. One of my favorite dish to use with large zucchini is to make zucchini bread. I’ve done this for many many years. Although when you’re shredding the zucchini you want to take out as many of the large seeds before mixing or freezing. By freezing the shredded zucchini in 2 cup freezer bags, you can pull out a bag to make any time during the year.

    I would add Blueberry Zucchini Bread to the list of uses for large Zucchini. Here’s a PIN of the recipe. You won’t believe how good it tastes. Hint, to get rid of some of the excess moisture in your shredded zucchini, pile it in a clean dish towel and wring it out.

    I have found the large zucchini are best shredded you can make veggie patties, zucchini fries, zucchini bread, squash casserole, baked zucchini boats, I even roast and puree them into my spaghetti sauce.

    I harvested a 7.5 lb zucchini
    It looks like a medium size watermelon.
    Have any thoughts about what to do with it
    It grew where I put old plants, in the beginning of a marsh in my backyard , was last fall. I was surprised that several zucchini plants started to grow there
